「潮州豆醬煮雞」

材料:-
雞......................1隻
豬腩肉(切細)....50g
乾蔥(切片)........3粒
薑片..................3片
蔥段..................2棵
普寧豆醬..........3湯匙
麻醬..................2湯匙
糖......................1湯匙
米酒..................1湯匙
熱水..................3.5杯

醃料:-
生抽..................1湯匙
老抽..................1/2湯匙
米酒..................1茶匙
糖......................1/2茶匙
白胡椒粉...........1/4茶匙


做法:-
1. 雞清洗乾淨瀝乾,加入醃料醃味30分鐘。
2. 熱油鍋下乾蔥片、薑片爆香,然後加入豬腩肉炒香。
3. 將普寧豆醬、麻醬、糖、米酒、熱水、蔥段和雞放入鍋內,煮至沸騰後,轉中小火煮25分鐘,然後把雞放涼,斬件上碟。
4. 把醬汁加入適量之生粉水煮至濃稠,然後淋上雞面便可。


小貼士:-
1. 雞隻選用較細小的為佳,以本食譜為例:雞隻約一斤十両重。
2. 加入適量之豬腩肉去烹調,可使醬汁更加濃滑。
